Ingredients:

  • Basil: 1 bunch

  • Cherry tomatoes: 1 punnet

  • Dark soy caramel: 2 tbsp

  • Fish sauce: 30 ml

  • MSG: 5 g

  • Sugar: 20 g

  • Oyster sauce: 2 tbsp

  • Chicken or pork mince: 300 g

  • Garlic: 1 bulb

  • Shallots: 2

  • Bird’s eye chilies: 3 (adjust for heat preference)

  • Egg: 1

Pad Kra Pow is a quintessential Thai dish that caught my attention after seeing it trending on social media. It's a simple, quick, and flavorful meal perfect for breaking in your wok. Ready in less than 20 minutes, it delivers bold, aromatic flavors with minimal effort—a true wok essential!

Method:

Using a pestle and mortar, pound the garlic, chili, and shallots into a smooth paste.

Heat oil in a wok over medium-high heat and fry the paste until fragrant.

Add your choice of chicken or pork mince and cook until no longer translucent.

Stir in dark soy caramel, oyster sauce, fish sauce, sugar, and MSG. Mix thoroughly until well combined.

Toss in cherry tomatoes for a touch of acidity and finish with freshly hand-peeled basil leaves.

Serve over a bed of rice and top with a perfectly fried egg with crispy edges.
